Traditional Andhra Style Yogurt Rice

(Perugu Annam)

Ingredients:
  • Plain yogurt-500g
  • Freshly plain cooked rice (one cup)
  • Olive oil-2 tbsp
  • Fresh curry leaves-2 stems
  • Salt-1 tsp
  • Cumin seeds-half a tsp
  • Mustard seeds- half a tsp
  • Red dry chillies-1 to 2  or fresh green chillies
  • Urad  daal-half a tsp
  • Grated fresh ginger-1 tsp
  • Small onion-1
  • Asafoetida powder(Hing)-half a tsp
  • Coriander leaves-1 stem for garnish

  1. Wash and cook one cup of plain rice with two cups of water may take 15 to 20 minutes and keep it ready.
  2. Chop the onions into small pieces keep it ready.
  3. Heat the non-stick frying pan with 2 tbsp of oil in medium flame.
  4. Once the oil is nice and hot add in mustard seeds, cumin seeds, urad daal mix well .
  5. Now add in onions, ginger and garlic paste ,asafoetida powder ,curry leaves mix well altogether. switch off the flame.
  6. Now take cooked rice in a bowl make sure rice is not too hot because if the rice is very hot then the yogurt may break .So that's the reason the rice must be Luke warm .Add in yogurt with some water ,1 tsp salt mix well till the rice absorb the yogurt nicely add in bit more yogurt if you needs too .
  7. Now add in fried onions, curry leaves into the rice and mix well .Check the salt is ok .If not add in a half a tsp more.
  8. Garnish with finely chopped coriander leaves.
  9. Yogurt rice will taste amazing to have with homemade aubergine pachadi or with ginger pickle.
  10. Delicious simple healthy homemade yogurt rice is ready to enjoy with friends and family .
Its a simple very taste traditional  healthy recipe from Andhra Pradesh south India by my grandmother. In our language Telugu we call it Perugu Annam
