Ingredients;
Aubergine(Chutney) Pachadi
(Vankaya Pachadi)

Big Vankaya(Aubergine)-1 or 2

Green Chillies-2

Onion-1

Cumin Seeds-1 tsp
-
Mustard Seeds-1 tsp
-
Garlic Cloves-3
-
Chana Daal-1 tsp
-
Olive oil-3 tbsp
-
Salt-1 tsp
-
Dry red chilli-1
-
Fresh curry leaves-2 stems
-
Coriander leaves-2 stems
-
Tamarind wet or dry -2 to 3tsp need to soak in water to get tamarind paste
Method:

Reheat the oven to 170 degree. Wash and put the big vanakya(aubergine)in a oven tray with foil by drizzling bit of olive oil on the aubergine and let it cook for 10 to 15 minutes

Chop the onion ,garlic, green chillies, coriander into a small pieces keep it on side .Soak a small block of fresh tamarind in warm water for 10 to 15 minutes and then squeeze it to get nice thick paste and throw the pulp .

Heat a frying pan with oil in a medium flame. Once the oil is heated .Add in few mustard seeds, few curry leaves, few garlic cloves, chana daal, few cumin seeds, green chilli, onion ,one red chillies, coriander leaves, green chillies add in soaked tamarind paste, salt fry all together well until they all cook .Switch off the flame.

Check the aubergine is fully cooked in the oven .Take the tray out and let it cool for 5 minutes .Switch off the oven.

Now try to remove the skin from aubergine cut it into medium pieces.

Add all the fried ingredients in a blender and blend it into smooth paste. Remove it into a serving bowl.

We will do Talimpu(tadka) heat a frying pan with medium flame add in oil .Once the oil is heated tear in few curry leaves, one garlic clove grated or chopped garlic ,one red chilli ,few cumin seeds, few mustard seeds, few cumin seeds mix well let them nicely fry for a minute or so ..switch of the flame .

Add everything into the pachadi mix well and enjoy with yogurt rice or with simple hot plain rice with adding touch of ghee.
