Authentic Tangy Tomato Rice

(Tomato annam)

Ingredients

  •  One cup rice (serves-2 people.We south Indian use our local sona masoori rice only ( available online or in most Indian grocery shops.Its a short gain rice and good for digestion) or your choice of basmati rice

  • Ripe red plum tomatoes-325g

  • Onion-1

  • Garlic cloves-2 (help decrease inflammtion)

  • Cashew nuts(optional) -10g(low in sugar ,rich in fiber,good for eye,good source of copper ,magnesium

  • Ghee(optional)-1tsp

  • Fresh curry leaves-2 stems

  • Olive oil or sunflower oil- 6 to 7 tbsp

  • Mustard seeds-1tsp

  • Dessicated coconut medium(course)-1 to 2 tsp

  • Coriander leaves - 2 stems

  • Green chillies-2

  • Jaggery-1 tsp(boost immunity system,good source of iron)

  • Cumin seeds-1tsp

  • Black pepper powder-half a tsp

  • Chana lentils-1tsp

  • Garlic and ginger paste-1tsp

  • Salt-1tsp(i only use pink salt in all my dishes.Because its less in sodium.) its a personal choice .

  • Garam masala powder-1 tsp

  • Coriander powder-1 tsp

  • Turmeric powder-1tsp

  • Asafoetida (hing)-half a tsp

Method;
  1. Wash the rice twice with cold water and then add two of water for one cup of rice in medium size pan .Cook for 20 minutes in low to medium flame keeping the lid half open .Once the water absorb by rice then only put the lid on for last five minutes and switch the flame off check the rice is fully cooked and let the rice cool down. Chop the onions, tomatoes, coriander,garlic cloves into small pieces keep it on side 

  2. Heat the non-stick frying pan in medium flame with olive oil on a medium heat.

  3. Add in chopped onions ,garlic cloves,mix for a minute let it cook add in tomatoes cook until tomatoes becomes soft  for 10 minutes switch the flame off and let it cool down blend it in a blender into a smooth paste .keep to one side .

  4. Heat a non-stick frying pan in medium flame adding oil and one tsp of ghee optional in a pan. Once the oil heated .

  5. Add the mustard seeds, cumin seeds, curry leaves ,chana lentils,ginger and garlic paste, asafoetida (hing) green chillies, turmeric powder, salt,jaggery,dessicated coconut mix all together well .

  6. Now add the blended tomato mix let it cook for 5 minutes .

  7. Now add in cooked rice mix slowly without breaking rice until all the spices, tomatoes mix well .switch of the flame

  8. Garnish with chopped coriander and enjoy the tomato flavoured rice hot hot .

  9. Add bit of ghee optional if you want to it will give nice aroma to the dish.
