Simple Delicious Amma Prawns Curry
( Prawns kurra)
Ingredients

Fresh Raw King Prawns-225g roughly 2 to 3 pack

Olive oil-9 tbsp(roughly 50ml)

Onions-2

Curry leaves-2 stems
-
Mustard seeds-1tsp
-
Cumin seeds-1tsp
-
Ginger & Garlic Paste-1tsp
-
Coriander powder-2 tsp
-
Dry coconut powder-4 to 5 tbsp

Garlic cloves-3
-
Fresh green chillies-2
-
Chilli Powder-1tsp
-
Turmeric powder-1tsp
-
Salt-1tsp
-
Coriander-2 stems to garnish

Garam masala powder-2 tsp

Plum Tomatoes -250g

Saffron Flavoured rice

Sona masoori rice-2 cups(300g)four cups of water .use same cup that you measured rice.

Oil-2 tsp

Onion -one chop into small pieces

Salt-1 tsp
-
Saffron-one pinch soak in warm water

Star anise-1,cinnmon-1,green cardamom-2,cloves-4,

Mint-1 stem
Method;
-
This recipe is best with fresh prawns only wash the prawns nicely and keep them on side. chop the tomatoes, onions, garlic ,coriander into small pieces and keep it on side .

Heat the Oil in a non-stick pan with oil in medium flame. When the oil has heated, add in the shallots, curry leaves ,mustard seeds, cumin seeds ,ginger & garlic paste, garlic cloves mix well.

Fry until the shallots are golden brown.

Now add the tomatoes, turmeric, salt, chilli powder and garam masala, coriander powder mix well.

let it cook until all the water has evaporated.

Now add in fresh prawns mix with all the spices well .cook for 10 to 15 minutes .

Keep the lid open for 15 mins, when the prawns change colour into orange then only you know prawns are fully cooked mix nicely until the curry looks dry nicely fry . Add in coconut powder and mix well for 1 to 2 minutes .Switch off the flame.

Garnish with coriander and enjoy on with paratha, roti or with hot plain rice
