Simply Tasty Paneer Mixed Peppers Kurra
Ingredients :

Paneer-225g
-
Plum Tomatoes- 260g or round tomatoes-3 medium size

Mixed colour peppers-3
-
Onions-3 medium size
-
Olive oil -9 tbsp
-
Organic Tomato puree-2 tbsp
-
Greek Yogurt-3 tbsp
-
Kasturi methi -3 tbsp
-
Ginger and garlic paste -1 tsp
-
Garlic cloves-2
-
Salt -1 tsp
-
Curry leaves-1 stem
-
Coriander leaves-1 stem
-
Chilli powder-2 tsp
-
Cumin seeds-1 tsp
-
Turmeric powder-1 tsp
-
Garam masala powder-1 tsp
-
Coriander powder-1 tsp
Plain rice
Saffron Flavoured rice
-
Sona masoori rice-2 cups(300g)four cups of water .use same cup that you measured rice.

Oil-3tsp

Onion -one chop into small pieces

Salt-1 tsp
-
Saffron-one pinch soak in warm water

Star anise-1,cinnmon-1,green cardamom-2,cloves-2

Mint-1 stem
Method:
Its a beautiful looking dish with healthy tomatoes ,mixed pepper sauce with touch of kasutri methi and Greek yogurt

Wash the onions, peppers ,tomatoes and garlic chop them all into small pieces keep them on side .

Wash the paneer in water and chop the paneer into small to medium size pieces.

Heat a non-stick frying pan in medium flame adding 1 tsp of oil .Once the oil been heated add cumin seeds, few curry leaves , onions ,tomatoes ,garlic cloves, ginger and garlic paste ,few coriander leaves, turmeric power ,chilli powder, salt ,coriander powder , garam masala powder ,tomato puree mix altogether well .Put the lid on for 5 to 10 minutes .

Check they all cooked well then remove into the blender and blend it into smooth paste and keep it ready on side

Now heat same frying pan or different one in medium flame with remaining oil .Once the oil been heated add one chopped onion fry them until they are golden brown in colour and then add diced paneer pieces mix well for 2 to 3 minutes .

Now add in blended tomatoes into paneer mix well put the lid on for 5 to 10 minutes .After 10 minutes add the Kasturi methi by rubbing in your hands to release the aroma mix well drizzle Greek yogurt of top garnish with chopped coriander leaves .Switch off the flame .

Enjoy your freshly homemade paneer curry with hot hot plain rice or saffron, mint flavoured rice with your friends and family .
