Tamarind Pulihora
(Chintapandu Pulihora)
Ingredients

Rice-1 or 2 cups freshly cooked rice( sona masoori)

Tamarind-100 g

Olive oil or sunflower oil-6 to 7 tbsp
-
Ghee- 1 tsp(optional)

Peanuts-50 g
-
Cashew nuts-50 g
-
Sesame seeds-50 g
-
Jaggery-1 tbsp
-
Curry leaves-2 stems
-
Mustards seeds-1 tsp
-
Chana Daal-1 tsp
-
Cumin seeds-1 tsp
-
Red chillies-3
-
Green chillies-2
-
Salt-1 tsp
-
Turmeric-1 tsp
-
Asafoetida-half a teaspoon
Method

Wash one or two cups of rice two times .If you are cooking one cup add 2 cups of water or if you are cooking 2 of rice add 4 cups of water cook it in medium to low flame. once the rice been cooked pour the cooked rice into a bowl and let it cool itself for 20 minutes roughly.

Soak the tamarind with one to two glasses of warm water for an hour .After one hour squeeze the thick tamarind pulp into a sauce pan .

Switch on the gas into medium flame and let the tamarind paste to boil .adding two green chillies, one teaspoon of oil, turmeric ,salt to taste until it becomes thick paste or until all the water to be absorbed or reduced. keep mixing now and then. Switch the gas off.

Take a frying pan switch on the heat towards medium .Heat olive oil ,ghee .once the oil is ready add in mustard seeds ,cumin seeds, Chana dal, red chillies, asafoetida powder, peanuts ,cashew nuts, mix well and fry them nicely .once they all fry add in curry leaves, jaggery, sesame seeds mix everything well wait until jaggery is bit melted and add in cooked tamarind paste and mix well switch the heat off .let it cool down

Now add all the mixture into the cooling rice and mix well until each rice grain been coated with the tamarind paste its better if you mix with your hands without breaking the rice grain .make sure you wash and dry your hands first.

Finely add in fried peanuts, cashew nuts everything that we been frying in olive oil and ghee. mix all together nicely .you may need to add in bit more salt after adding tamarind paste .but taste it first then if you need add salt and mix all together again .

Now tamarind pulihora is ready for you to enjoy .If you want to you can heat it up before you eat it.
