Authentic Andhra Sweetcorn Vada
(Mokkajonna Garelu)
Ingredients:

Fresh sweetcorn -2

Fresh Ginger-medium size block
-
Garlic cloves-2
-
Green chillies-3
-
Salt-1 tsp
-
Cumin seeds
-
Mint-2 stems
-
Coriander-2 stems
-
curry leaves-2 stems
-
Onion-1
-
Rice flour-half a cup to one cup(roughly 5 to 6 tbsp

Sunflower oil-200ml
Method:

Peel the sweetcorn from the cob, chop the onion ,mint, coriander, peel the garlic, ginger skin and chop them into small pieces keep them all ready.

Now blend the sweetcorn, mint, coriander, garlic ,ginger, green chillies, salt ,cumin seeds, in a blender without adding water into a coarse

Remove it into a bowl add in rice flour, onions, curry leaves mix well with your hand into a thick consistent keep it on side .Add extra one to two spoon of rice flour if you need it .

Now take a deep frying pan heat it in a medium flame with oil .Once the oil is heated we are ready to fry our garelu.

Put little oil into your hands .Take a scoop of sweetcorn mix into your hands press gently into any shape you want and slowly realise it into the hot oil by taking a lot of care .Slowly keep turning and fry until the garelu is golden brown in colour take them out into a plate with kitchen tissue .Repeat same again until you finish the mix .

You can also make the mix the day before and keep it in fridge until you need it .Try to have sweetcorn garelu this hot hot with any of your homemade favourite pachidi it will taste so delicious .
