Sweet potato kurra(curry)
(Chilakada Dumpa kurra)
Ingredients

Sweet potato's -2(medium size)

Onions-2
-
Cumin seeds-1 tsp
-
Mustard seeds-1 tsp
-
Fresh curry leaves-2 stems
-
Garlic cloves-3
-
Dry red chillies-2
-
Salt-1 tsp
-
Chilli power -1 tsp
-
Turmeric powder-1 tsp
-
Ginger & garlic paste-1 tsp
-
Chana dal-1 tsp
-
Olive oil- 6 tbsp
-
Coriander leaves-2 stems(garnish)

Water -1 table spoon

Method;

Peel the sweet potato skin with peeler .and chop it into small cubes .keep it on side.

Chop the onion into small pieces.

Heat medium size saucepan with olive oil in low heat

Now add cumin, mustard seeds ,curry leaves, chana dal, mix well until they fry for 2 to 3 minutes.

Now add onions ,sweet potato, salt, turmeric, ginger &garlic paste, garlic pieces, chilli power ,green chilli, red chillies mix well.

Keep the sauce pan lid half open. adding 2 table spoon of water mix well.

Please remember not to mix curry to much .Because sweet potato can become like mash .If we mix too much .while its cooking.

keep the heat on medium for 10 to 15 minutes .

Now open the lid mix curry slowly without breaking sweet potato .the dish will look beautiful nice peach colour with full of lovely fragrance.

Switch the heat off and garnish with finely chopped coriander leaves.

My family most favourite curry is sweet potato. Specially my son and hubby like it so much .I first tasted this yummy curry at my mother-in-law home .Since then i thought one day i will share with my friends and family .I am so happy .Today finally i am adding this recipe thinking my lovely mother-in -law.
