Authentic Spinach Chicken or paneer Kurra
(Palakura kodi kurra)
Ingredients:

Boneless Chicken thighs or you can make it with paneer or potatoes -640g

Fresh Spinach -250g
-
Onion-2
-
Garlic clove-2
-
Tomatoes-plum small pack
-
Ginger and garlic paste-1 tsp
-
Chilli powder- 1 tsp
-
Salt-1 tsp
-
Turmeric-1 tsp
-
Coriander powder-1 tsp
-
Garam masala powder- 1 tsp
-
Mustard seeds-1 tsp
-
Cumin seeds-1 tsp
-
Urad daal-1 tsp
-
Dry red chillies-2
-
Olive oil-9 tbsp
-
Dry Desiccated coconut -3 tbsp

Green chillies(optional)

Wash and remove the fat on the chicken and dice it into medium size pieces .If you are making with paneer dice it into medium size or if you are making with potatoes peel the skin and dice it into small pieces and keep it in a bowl of water until you cook it.

Wash and Chop the onion, tomatoes ,spinach ,garlic into very small pieces set a side .

Now heat a non-stick frying pan in medium flame adding olive oil. Once the pan is ready add in cumin seeds, mustard seeds, urad daal, chopped garlic cloves, dry red chillies, onions mix well until the onions are well cooked and then add in chopped tomato, turmeric powder, chilli powder, salt ,coriander powder, garam masala powder mix all well for 1 to 2 minutes put the lid on half open for 10 minutes.

After 10 minutes check the tomatoes are soft .Now add diced chicken or paneer or potatoes pieces mix well put the lid on .

After 10 minutes check the chicken is cooked well and all the water been evaporated from the chicken.

Only after all the water been evaporated then add dry washed spinach into the chicken mix well .please remember not to put lid on once you added spinach leaves .Keep mixing well until is well cooked and spinach kept its natural colour .In the end add desiccated coconut and mix well for 2 to 3 minutes .If you are happy with chicken been fully cooked .Then switch of the flame .
