Traditional South Indian Dahi Vada

(Perugu Vada)

Ingredients:
  • White Urad daal-1 cup
  • plain rice-2 tsp
  • Cumin seeds-1 tsp
  • Mustard seeds-1 tsp
  • Chana daal-1 tsp
  • Curry leaves-2 stems
  • Red dry chillies- 2 
  • Green chillies -2 
  • Plain yogurt -500g one pot
  • Hing-half a tsp
  • Olive oil-500ml
  • Turmeric powder-half a tsp
  • Coriander leaves-2 stems
  • Salt-2 tsp

  1. Wash the urad daal  and rice twice to soak overnight or at least 5 hours and blend into smooth paste in a blender with adding a bit of salt .If you need to add small amount of water  4 to 5 tbsp. Take it into a bowl keep it on side to rest for one hour.
  2. Now mix plain yogurt with 10 to 20ml of water to become into smooth paste .
  3. Pour the yogurt into a flat bowl and keep it ready .
  4. Heat a deep frying pan with oil in medium flame until the oil gets hot to deep fry the Vada.
  5. Mean while heat a small pan for (thalipu)with 3 tbsp of oil once the oil been heated add in mustard seeds, cumin seeds, chana daal, curry leaves ,chopped green chillies, Hing powder, dry red chillies, turmeric powder ,salt mix all together switch of the flame and pour it into yogurt mix keep it on the side .
  6. Now we will start to deep fry vada make sure your oil is hot .Now take a cling film and put it on a plate add a small amount of vada mix on it and dab it with your fingers and make a hole in the middle, slowly lift it and drop it into the oil taking a lot of care fry them until they are light brown in colour once they are ready take them onto a plate with kitchen tissue .
  7. Take a bowl of water and mix three tbsp of yogurt mix that we already prepared .
  8. Now add hot vada into the water first remove them and drop them into yogurt mix and them the soak .Repeat same steps by frying vada dropping in water and adding them in yogurt .
  9. Now your super soft tasting dahi vada are ready to you to enjoy with your family and friends.
South Indian perugu vada is a very traditional dish in south .We will make this authentic dish for  lots of our Hindu festivals
