Delicious tasting Vegetarian kofta curry

Sorakaya and paneer kofta

(bottle gourd)

Ingredients:
  • Sorakaya(bottle gourd)-1 long bottle gourd makes 15 medium size kofta balls
  • Paneer-225g
  • Onions -2 medium size 
  • Tomatoes-3 medium size 
  • Ginger and garlic paste - 2 tsp
  • Garlic cloves-2 
  • Curry leaves -1 stem
  • Coriander -2 stems
  • Dry red chillies -2
  • Cashew nut paste-3 tbsp
  • Plain yogurt-6 tbsp
  • Coconut milk-6 tbsp
  • Gram flour-2 tbsp
  • Rice flour-1 tbsp
  • Salt-1 to 2 tsp
  • Chilli powder-2 tsp
  • Turmeric powder-1 tsp
  • Coriander powder-2 tsp
  • Garam masala powder-2 tsp
  • Cumin seeds-1 tsp
  • Mustard seeds-1 tsp
  • Olive oil-4 tbsp
  • Sunflower oil -500ml

  1. Wash tomatoes, onions chop them into small pieces. Chop the garlic into small pieces keep them on side .
  2. Heat a non-stick frying pan with medium flame .
  3. Add in 2 tsp of olive oil .Once the oil been heated add in chopped onions let them cook for 2 to 3 minutes and then add tomatoes ,garlic ,ginger and garlic paste ,1 tsp salt,1 tsp chilli powder, turmeric powder,1 tsp coriander powder,1 tsp garam masala,you can add cashew nuts here in mix or you can make it separate powder mix altogether put the lid on let them cook for 5 to 10 minutes .After 10 minutes check the onions and tomatoes cooked fully switch the flame off .Once it cools down blend the mix in blender into smooth paste .Keep it on side 
  4. Now heat a deep frying pan with 500ml sunflower oil in medium flame until its very hot to deep fry for koftas while the oil is getting ready .
  5. Lets make kofta mix take a deep bowl peel the skin of sorakaya and grate it finely in a bowl and squeeze as much water as possible from sorakaya(bottle gourd).Next grate the paneer block add in chopped coriander,1 tsp salt,1 tsp chilli powder,1 tsp garam masala powder,1 tsp coriander powder,2 tbsp gram flour,rice flour mix all well if you want to you can taste it to check the salt and chilli powder if you need more you can add in now and mix again .
  6. Now make medium size balls .Check the oil is heated and ready to fry. Test the oil is ready by adding a very small ball if its float straight way then the oil is ready to fry .
  7. Slowly taking lots of care with hot oil .Add each balls in one by one don't pack the pan with some many at once .
  8. Slowly move the balls round until they fry into golden brown in colour remove them into a plate with kitchen tissue paper do the same until all the kofta ball done .Switch of the flame 
  9. Now heat a non-stick frying pan with medium flame adding 3 to 4 tbsp of oil .Once the oil been heated add in mustard seeds, cumin seeds ,curry leaves now slowly add in blended tomatoes, onions, spices puree into the pan mix well .Now in a cup add coconut milk, yogurt, cashew nut paste mix well without having any lump from the yogurt  and pour it into the gravy mix well wait for two to three minutes switch of the flame .Add in koftas into the gravy .Garnish with chopped coriander leaves .
  10. Enjoy homemade tasty kofta curry with hot hot plain rice or with hot chapatis made at home with your friends and family .
