South Indian Ugadi Festival Mango Pulihora
Ingredients:
(Mamidikaya Pulihora)

Raw green mango -medium size 6

One or two cups cooked sona masoori rice

Olive oil-40 ml(roughly 11 tbsp)

Ghee-1 tsp(optional)
-
Fresh Curry leaves-2 stems
-
Coriander leaves-2 stems
-
Chana daal-2 tsp
-
Cumin seeds-1 tsp
-
Mustard seeds-1 tsp
-
Turmeric powder-half a tsp
-
Salt- 1 tsp
-
Jaggery-1 tsp small chunk
-
Cashewnuts-10g
-
Dry red chillies-2
-
Fresh green chillies-3 or 4
-
Asafoetida powder(hing)eguva-half a tsp

Peanuts-10g or cashewnuts 10g
Method:

Wash the rice twice and cook the rice in medium flame for 20 minutes to get perfect rice .If you are cooking one cup rice add 2 cups of water .Keep the lid half open until the end .Just in the end cover the lid fully and let the rice cook in low flame and switch of the rice .Remove the hot rice into a plate and let it cool for 10 to 20 minutes.

Peel the skin of mangoes and grate the mangoes with the grater keep it on side .

Wash the curry leaves, coriander leaves, green chillies and chop them into small pieces.

Now heat a frying pan with oil and one tsp of ghee optional in medium flame once the oil is ready add in cumin seeds, mustard seeds, chana daal let them all fry a bit then add in cashew nuts, peanuts ,green chillies, dry red chillies, hing powder, salt, turmeric powder, curry leaves, jaggery,mix all together well .

Now add in grated mango mix well let it cook for 5 to 10 minutes .

Now add in cooked rice and lets mix altogether well and switch of the flame .Add in chopped coriander leaves enjoy hot hot delicious tasting traditional festival mango pulihora by first offering to god .This recipe is my family favourite for lots of Hindu festival at my home .I hope you will also enjoy making this dish for your loving family too .
Amazingly tasty traditional south Indian mango pulihora is my family favourite dish .I will always make it on the ugadi festival day to my family .
