Andhra Style Bagara Rice 

(Telugu Bagara annam)

Ingredients
  • Basmati rice -2 cups(300g) or sona masoori
  • Fresh or frozen peas-160g
  • Carrot-1 medium size
  • Plum tomatos-4 big size
  • Onions-2
  • Ginger and garlic paste -1 tsp
  • Mint-2 stems
  • Garlic cloves- 4
  • Coriander-2 stems
  • Green chillies-3
  • Salt-1 tsp
  • Cashew nuts -10 pieces roughly
  • Olive oil -6 tbsp
  • Ghee-1 tsp(optional)
  • Cumin seeds-1 tsp
  • Cinnamon stick-1
  • Cardamom-2
  • Big black cardamom-2
  • Cloves-4
  • Bay leaves-2

Method:
  1. Wash the rice twice in cold water and soak the rice with fresh water for 30 minutes .
  2. Slice the onions into thin long slices ,chop the tomatoes into small pieces, chop the mint leaves ,coriander leaves, peel the carrot skin and chop into small pieces, remove the  skin from garlic, wash the pea keep all of this ingredients ready .
  3. Heat a non-stick frying pan in medium flame by adding the oil and ghee .Once the oil is heated add cinnamon stick, cumin seeds, cloves, cardamom, bay leaves, black cardamom, cashew nuts, salt fry nicely and then add onions fry nicely until they become golden brown .
  4. Now add ginger and garlic paste mix well .Now add in tomatoes ,carrot, pea ,green chillies mix all well and put the lid on for 5 minutes. So the tomatoes become nice and soft .Open the lid after 5 minutes and check tomatoes should be fully cooked .
  5. Now add in three and half cups of water to the tomato mix well put the lid on let the water boil fully wait for 1 to 2 minutes remove the lid .Now add soaked rice  into the boiling water .Please use same cup that you measured your rice to get perfectly cooked rice .Put the lid on for 10 to 15 minutes in low flame .After 10 to 15 minutes open the lid and check rice should be perfectly cooked switch of the flame and garnish with coriander leaves .
  6. Enjoy the  simple delicious dish with amazing aroma of mint, dry spices with peas, carrots healthy herbs.
Its an amazing tasting dish to enjoy with friends and family .So simple to make. Its a  perfect dish to have with egg masala curry and with pomegranate raita combination
