GudivadaMonkfish Fry

(Chepala Vepudu)

Ingredients;
  • Monkfish-(6 medium size pieces roughly. you can get from Waitrose at fresh seafood counter)
  • Onions(shallots)-4
  • Yogurt-3 tbsp
  • Curry leaves-2 stems
  • Lime-1
  • Garlic cloves-3
  • Olive oil-7 to 8 tbsp
  • Mustard seeds-1 tsp
  • Cumin seeds-1 tsp
  • Ginger and garlic paste -1 tsp
  • Coriander-2 stems
  • Mint-2 stems
  • Turmeric-1 tsp
  • salt-1 tsp
  • chilli powder-1 tsp
  • Garam masala powder-1 tsp
  • Coriander powder-1 tsp
  • Black pepper-1 tsp 
  • Fresh mint leaves-one small bunch(only need it if you are making mint chutney )
  • Fresh coriander leaves-one small bunch(only need it if you are making chutney)

Method;
  1. Wash the monkfish with cold water and squeeze all the water.
  2. Finely chop onions, garlic ,mint, coriander leaves and cut the lime
  3. Now we are Marinating  the fish in a bowl by adding  ginger garlic paste ,salt, black pepper ,one tsp oil, turmeric, chilli powder ,lime, yogurt ,garam masala, coriander power, finely chopped few mint leaves mix all together well. keep it on side 10 to 15 minutes
  4. Take a wide non-stick frying pan .keep it on heat with medium flame .add olive oil .once the oil is heated add mustard seeds ,cumin seeds mix a bit and drop finely sliced onions fry until slight brown with pinch of salt
  5. .Add curry leaves, finely chopped mint leaves mix well .
  6. Now bring the bowl of marinated monkfish that been resting for 15 minutes by now mix well once more.
  7. Slowly start adding marinated fish pieces one by one into the fried onions by taking lots of care.
  8. Still keep flame on medium to high now .
  9. Only turn once or twice slowly with out breaking the fish piece .fry each side until slight golden brown colour and also you will be getting amazing aroma with caramelized onions, mint, warm spices ,cumin, mustard, aroma of curry leaves superb wow dish when you cooking in your kitchen with family or friends .It will only take few minutes to fry amazing stunning looking monkfish .
  10. Switch off the flame when you think fish is fully cooked .
  11. Garnish with finely chopped coriander leaves and enjoy tasting the most divine wow dish in my website and also I feel so proud sharing my lovely family wow recipe with you all and I am sure you will fellow in love too with wonderful tasting monkfish .
