Mint Flavoured Rice
(Pudina Annam)
Ingredients

Sona massori or basmati rice -freshly cooked rice one cup or two cups

Fresh mint-1 big bunch
-
Green chillies-4
-
Onion-1
-
Coriander -1 small pack
-
Ginger and garlic paste -1 tsp
-
Bayleafs-2
-
Fresh ginger -1 small piece
-
Dry red chillies-2
-
Olive oil-3 to 4 tsp
-
Salt-1 tsp
-
Turmeric powder-half a tsp
-
Garam masala powder-1 tsp
-
Coriander powder-1 tsp
-
Cumin seeds-1 tsp
-
Chana Daal-1 tsp
-
Mustard seeds-1 tsp
-
Cashew nuts or peanuts (optional)-10g
Method:

Keep freshly cooked one or two cups plain rice ready .Remove the lid from the rice so it can cool down little bit until we need it .

Remove the Wash the mint leaves,coriander, green chillies.Remove the skin from ginger,onion wash and chop it into small pieces.

Now blend all together in a blender with half a teaspoon of salt and add small amount of water if you need have make it into smooth paste .

Heat a big pan on a middle heat. Add in olive oil and wait for oil to heat up.

Add in cumin seeds,chana daal,mustard seeds,bayleaf mix well .Add in dry red chillies ,ginger and garlic paste mix a bit .

Now add in the mix to the pan from the blender by adding half a teaspoon of salt,garam masala,coriander powder into the pan keep mixing well until all the water has evaporated.May take 3 to 5 mintues .

Try and keep the flame on low.Now add in freshly cooked rice and gently start mixing the rice in until all the rice is mixed well .

Switch of the flame .

Remove it into a nice serving bowl.

Optional mix in some fried cashewnuts or peanuts if your family or friends wants that extra nutty flavour to the dish .
