Hyderabadi  Egg Masala                 Biryani

(Guddu Masala Biryani)

Ingredients:
  • Kohinoor Basmati Rice-1 or 2 cups
  • Eggs-4
  • Plain yogurt-one 500 grams pot
  • Olive oil or sunflower oil-10 (80ml roughly for both biryani and for gravy)
  • Ghee-1 tsp(optional)
  • Cumin Seeds-2 tsp
  • Onions-5
  • Bay leaves-6 
  • Coriander leaves -2 stems
  • Ginger and garlic paste-2 tsp
  • Garlic cloves-4
  • Cashew nuts-10g
  • Mint leaves-2 stems
  • Green chillies-2 to 3
  • Biryani masala Powder-2 tsp
  • Garam masala powder -2 tsp
  • Coriander Powder-2 tsp
  • Chilli Powder-2 tsp
  • Turmeric powder-1 tsp
  • Salt-3 tsp
  • Cashew nut paste-4 tsp
  • Saffron-1 tsp(soaked in warm milk)
  • Cinnamon stick-2
  • Star aniseed-3
  • Black cardamom-6
  • Green cardamom-6
  • Cloves-6
  • Coconut milk small can-165ml

Method:
  1. Wash the basmati rice twice and soak the rice in water for 20 minutes .keep it on side.
  2. Boil the eggs for 15 minutes in water with medium flame .once they are fully boiled peel the shell and keep it on side.
  3.  Remove the can lid from the coconut milk , chop the onions into small pieces, chop the coriander ,mint, green chilli, 
  4. Now marinate the eggs in a bowl adding in 5 tbsp of yogurt, one tsp of garlic and ginger paste, one tsp of chilli powder, one tsp of turmeric powder, one tsp of salt, two tsp of garam masala powder ,one tsp of coriander powder, one tsp of oil ,few chopped coriander leaves ,mint leaves, one tsp of cashew nut paste mix well keep it on side for 10 minutes.
  5. Heat a non-stick deep pan in medium flame with 5 to 6 tbsp of oil and one tsp of ghee 
  6. Once the oil is ready .Add in half cinnamon stick, three cloves,3 cardamom's, one black cardamom, two green cardamom, fry till they release the aroma. Now add  cashew nuts .keep some fried cashew nuts on side to add on top of rice later, one green chilli, two bay leaves ,chopped garlic cloves ,onions fry well until they become golden in colour.
  7. while they all frying .Take a deep pan boil 8 to 9 cups of water try and use same cup that you measured the rice .Heat the water with medium flame adding in one bay leave, cumin seeds, one tsp of salt, one cardamom, one tsp oil ,squeeze some lime wait until the water boil .
  8. Now check the onions should be ready .add in the marinated eggs mix well and cook for 10 minutes until the yogurt gravy been evaporate little bit .
  9. Now the water should be ready boiling ,add in the rice without water .let the rice cook half way .may take 10 minutes .keep checking the rice because you don't want rice to full cooked yet. once you are happy that the rice is just cooked .remove the rice from the water .
  10. Now check the egg gravy is ready slowly add in half cooked rice on top. keeping the flame on low. add in mint leaves, some gravy from the bottom on the rice ,drizzle soaked saffron in milk, add fried cashew nuts,
  11. Now put the lid on fully .keep the flame on low. let  the rice cook full for 10 to 15 minutes.
  12. Switch of the flame for rice and let it rest for 5 to 10 minutes.
  13. Now open the lid from the biryani the aroma should is amazing with saffron smell.
  14. Take it into a serving bowl .Add some coriander leaves on top .Enjoy with your lovely family .
