South Indian Plain,Masala or Paneer Dosa

Ingredients
  • Fresh dosa batter should be prepared by your self measurements for dosa
  • 3 cups-rice/sona masoori or long grain rice or pudding rice 
  • Urid dal-1cup same cup that you used for rice 
  • Method-wash the rice and urid daal separately twice & soak them separately with fresh water by adding half a tsp of fenugreek seeds, two tbsp of chana daal
  •  Soak for  4 -5 hours or best to soak it overnight.
  • After a good 4 to 5 hours or overnight soaking remove the water and blend separately urid daal first may need to add some water roughly 4 to 5 tbsp while blending add one tsp of white or brown sugar to give your dosa nice golden colour and make it into smooth paste and remove it into a deep bowl .
  • Next remove the water from soaked rice and blend into smooth paste .Try not to add any salt into this mix yet so it will stay fresh for a week in the fridge .Only add salt when you need it into a small amount of batter when you making dosa.  Add it into urid daal and mix both together in a bowl & leave it for a good fermentation overnight or for 6 to 7 hours in a warm place is very important for perfect dosa .
  • Dosa mix you can buy from shops-5oo grams you can buy from Indian shops or Gits ,Fudco ,Mtr dosa mix you can buy from big Sainsbury supermarkets and follow the instructions on the pack and mix two tbsp of plain yogurt and one tsp of white sugar in the mix to get soft dosa. 
  • The most important ingredient is time. you simple cannot rush the fermentation process mix and have to leave it overnight or at least roughly 6 hours to get perfect dosa. 
  •  Flat dosa pan (you can only buy from Indian shops or online and sunflower oil cooking spray)
  • If you are using ready dry dosa mix then add 2 tsp of plain yogurt,1 tsp of white sugar and mix with water by following steps on the pack.
  • If you want to make masala dosa then you need to make curry follow the ingredients list:
  • Potatoes -500grams pack
  • Olive oil-5 tbsp
  • Cumin seeds-1tsp
  • Mustard seeds-1tsp
  • Chana daal-1tsp
  • Onions-2
  • Curry leaves-1 stem
  • Coriander leaves -3 stems
  • Salt-1tsp
  • Chilli powder-1tsp
  • Turmeric powder-1tsp
  • Garam masala-1tsp
  • Coriander powder-1tsp
  • Ginger and Garlic paste-1tsp
  • Garlic cloves-3

Method:
  1. If you are using ready powder mix like MTR or Gits or Fudco powder in a deep bowl with adding 2 tsp of yogurt, sugar 1 tsp to give your dosa nice golden colour and mix with required amount of water that's needed on the pack to make smooth batter .The reason we are adding yogurt it gives superb softness to batter and also by adding sugar when we make dosa it gives golden colour to your divine dosa .Once you nicely mix smooth batter just keep it on side to rest for at least for 6 hour. Its better if you mix and keep it over night in warm room for batter to go through fermenting roughly 6 hours or warm .So you will get perfect dosa the next day. you simply cannot rush the fermentation process.
  2. Wash the potatoes and peel the skin cut them into small pieces and boil them for in the pan with water for 30 minutes. until they fully cooked. remove the water keep them on side.
  3. Chop the onions finely into small pieces and keep it on side .
  4. chop the garlic into small pieces too .
  5. Now take non-stick pan .heat the pan with oil in medium flame.
  6. Once the oil is heated .add in cumin seeds, mustard seeds, chana daal, curry leave, chopped garlic cloves, mix well. add in ginger and garlic paste
  7. Now add in onions fry until golden brown in colour.
  8. Now add salt, turmeric, chilli powder, garam masala, coriander powder mix all together.
  9. Now add in cooked potatoes and mix all together well and put the lid on for 10 to 15 minutes
  10. After 15 minutes switch of the flame and keep the lid half opened and keep it on side .
Preparing Dosa
  1. Heat the dosa pan with medium flame.
  2. Keep a bowl of oil ready next to the dosa pan
  3. Now check how is dosa batter mix is doing .mix well with deep serving spoon and keep it ready until the pan been heated well .
  4. Once the pan been heated .pour in the batter in middle of pan and try to move the spoon round and round gently taking lots of care with out breaking  until the batter spread into thin layer. once you see its cooking .add bit of oil on the outer layer of the dosa .
  5. Now put one tbsp of potato mix in the middle of the dosa .once the dosa is looking golden brown in colour underneath you slowly fold the dosa on the top of potato curry and remove it into the plate .
  6. Your yummy looking healthy dosa is ready for you to enjoy with your family or friends.
  7. Dosa is very healthy because it made by rice flour and urad daal .Its better if you use very less oil when you making dosa.
  8. You can enjoy plain dosa with coconut pachadi(chutney) or simple tomato pachadi(chutney) or peanut pachadi (chutney) all three authentic pachadi recipes are on my website too.
In south India dosa we will have in the morning as a tiffin(breakfast) with lovely homemade fresh blend pachadi(chutney ) so taste when you have it with family around you in India.as to be eaten hot hot with adding bit of ghee(optional)
