Authentic South Indian lime rice

Ingredients

Rice basmati or sona masoori rice -1 cup serves two people .Discover the authentic South India's aromatic light weight sona masoori rice. Peanuts-20g or cashew nuts

Mustard seeds-1 tsp

Dry red chilles-2

Cumin seeds-1 tsp

Chana lentils-1 tsp

Fresh curry leaves only-2 stems

Salt-1 tsp

Green chillies-2

Turmeric powder-1 tsp

Olive oil or sunflower oil-4 tbsp

Asafoetida-1/2 tsp(hing)
Method;

wash one cup of plain rice in a deep pan twice with cold water .Once you see clear water then its ready to cook with 2 cups of water in medium flame keep the pan lid half a open for 15 to 20 minutes .Only in the end once all the water been absorb put the lid on full. Once done, switch off the heat .

Take a tray spread the cooked rice in to cool the down .

Heat the non-stick pan with oil on a medium flame .Once the oil is ready add mustard seeds, cumin seeds, curry leaves ,green chillies, chana lentils ,red dry chilles and peanuts or cashew nuts, asafoetida powder fry until they are sizzling or until the peanuts are golden brown.

Now add the cooked rice, turmeric and salt into the pan mix well until the rice is fully coasted for 10 minutes .Switch of the flame.

Now squeeze in the juice from the limes mix well .

Garnish with freshly fried curry leaves .
