Traditional Semolina kesari Sweet

Ingreidents;

  •  Coarse semolina-200g(1 cup)

  • Butter -70g(unsalted organic yeo valley)

  • Cashew Nuts -10g(roughly)

  • Cardamom Powder (1tsp)

  • White sugar-200g(1 cup)

  • Pistachio's nuts-10g(roughly)

  • Cardamom pods-2

  • Almonds nuts-10g(optional)

  • Golden raisins-10g(optional)

  • Dry rose petals (optional only for garinshing to make it look extra special )

  • Saffron (Soaked in 1tsp   of warm milk or water )

  • Water-(2 cups)

  • Milk-20ml(optional)

Method;

  1. Heat a medium size pan with 2 cups of water in medium flame adding in sugar let it boil for 10 to 12 minutes add in cardamom powder and fresh cardamom pods by pounding in pestle and mort remove the skin add into sugar syrup mix and switch it off.

  2. Now take a non-stick wide pan adding one to two tbsp of butter in medium flame. once the butter is was melted add in semolina. Keep mixing until semolina is nicely mixed in butter slightly roasted and looking like very course powder consistent may take 5 to 10 minutes remove it into a bowl keep it on side .switch of the flame .

  3. Using the same pan add in one tbsp of butter keeping on medium flame add in chopped cashew nuts, chopped almonds ,chopped pistachio's ,raisins mix well fry until slightly golden brown colour remove into a bowl .

  4. Now in a same pan with medium flame add in rest of butter wait until it melt add in roasted semolina pour in sugar syrup by mixing add in bit of milk keeping mixing well for 5 to 8 minutes .keep mixing until the semolina is cooked and water ,milk been evaporate from the pan .the semolina should release the pan without sticking to the pan base .add in saffron soaked in milk or water mix well. switch of the flame .

  5. Now Add in nuts to Semolina mix well remove it into a serving bowl and garnish with nuts ,dry rose petals it will look beautiful, smell superbly and taste amazing 

  6. Now your home made South Indian traditional sweet is ready to taste with your friends and family .
