Mumbai Style Prawn Kathi Rolls with South Twist
Ingredients:
First Step
-
Fresh raw jumbo prawns two packs -225grams or boneless chicken thighs small pack and chop them into small pieces.

If you are vegetarian you can use paneer, potatoes, carrots are any of your choice of vegetable that you can marinate it too.

Onions-2 dice it into small pieces

Olive oil-4 tbsp
-
Plain yogurt-4 to 5 tbsp
-
Green chillies-2(optional)chop it into small pieces
-
Cumin seeds-1 tsp
-
Garlic cloves-2 chopped into very small pieces
-
Jaggery -1 tsp(The reason we are using jaggery because its very health. Most of dishes in south India use jaggery then adding sugar in dishes. Try to replace sugar with jaggery .Its very good for digestion and many more good health benefits to our body)

Ginger and garlic paste-1 tsp
-
Salt-1 tsp
-
Turmeric powder-1 tsp
-
Garam masala powder-1 tsp
-
Coriander powder-1 tsp
-
Tandoori Masala powder-1 tsp
-
Coriander-2 stems
-
Lime juice- 2 tbsp

Second step
Third Step (Mint chutney)
Fourth Step
Make a dough 20 minutes before the class start and keep it ready .covering with wet cloth

Wheat flour- 100 grams
-
Plain flour -100 grams
-
Salt-1 tsp
-
Milk -To make a dough
-
Oil-1 to 2 tsp
-
Mix all together to make a normal dough
-
And cover with wet cloth and keep it ready
Seventh Step

Red onion-Half diced into small pieces
-
Black pepper-1 tsp
-
Chilli flakes-1 tsp
-
Salt-half a tsp
-
Garlic-1 diced into small pieces(optional)

Jaggery-1 tsp
-
Just warm the 4 tbsp of olive oil and add all the ingredients in mix for 5 minutes and switch off.

Coriander-small bunch

Salt-1 tsp

Lime-1

Black pepper-1 tsp

Chaat masala-1 tsp

Yogurt-3 to 4 tbsp

Blend altogether .take it in a serving bowl and mix the yogurt

Fifth Step
Alternative to eggs

Gram flour-2 tbsp
-
Plain flour-2 tbsp
-
Baking powder-1 tsp
-
Salt-half a tsp
-
Black pepper-1 tsp
-
Water-mix altogether to thin batter

Sixth Step

Eggs-2
-
Salt-half a tsp
-
Black pepper-1 tsp(optional)

Break the eggs in a bowl and mix altogether with salt ,black pepper
Eighth Step
Ninth Step

Paneer-50 grams grated
-
Black pepper-pinch to sprinkle
-
Salt-pinch to sprinkle
-
Chilli powder-pinch to sprinkle and mix well.

Curry leaves-2 stems
-
Black pepper-pinch to sprinkle

Salt-pinch to sprinkle

Just fry leaves in 2 tbsp of olive oil
Ingredients to marinate
Method:

Wash the prawns nicely in a bowl and chop them into small pieces. chop the onion into small pieces, chop the coriander ,chop the garlic cloves into small pieces and keep all of them ready.

Marinate the prawns with adding in yogurt, ginger and garlic paste, salt, chilli powder, garam masala powder, turmeric powder, tandoori masala powder, lime juice, jaggery, coriander powder mix well and keep it on side for 10 minutes.

Heat a non-stick frying pan with oil in medium flame. once the oil is heated .Add in cumin seeds ,onion, jaggery ,green chillies mix all well .Now add in marinated prawns mix well .keep the lid half open let it cook for 10 to 15 minutes with medium flame .keep checking now and then. The reason we are using jaggery because its very health then adding sugar into dish .

Traditional kathi rolls have lots of preparation to keep it ready .Before starting the class is very important to follow step by step with Meena .When you making the kathi rolls by live in class. Please been organised by following all the nine steps that i wrote showing the pictures. Try keep it ready the night before to make life easy with your children help.

Keep the dough ready to make kathi rolls in class .We need a rolling pin ,flat chopping board and bit more flour . Sprinkle some flour lightly across a flat chopping board so the dough does not stick to the surface. We have to roll out the dough flat onto the chopping board and make a round shape sprinkling the flour if you need it .And keep it a side .Do all the kathi rolls that you need for your family .

Heat a flat frying pan in medium flame .Once the pan is heated add a kathi roll to fry slightly in golden brown in colour .Adding little oil and turning front and back .Once it cooked both sides .Spread the egg mix on top and cook again for few second and take it off onto a plate .Do the same with all of them .If you are vegetarian .Try to use different frying pan .Heat it up and follow the same step .Spread gram flour mix on top and cook for few second and take it off onto the plate. once you done with all kathi rolls .switch off the flame.

Now add cooked prawns, green pepper, onions mix, mint sauce, onions, garlic, chilli drizzle ,grated paneer, curry leaves crushed with your hands the aroma of crushed curry leaves will be amazing.

Now slowly gently fold the kathi roll one side .If you want to put foil at the back of the kathi roll when you holding it .It will taste delicious .You and your lovely family will be munching all of them.

Please follow same step with the vegetarian kathi rolls also .When you taste them hot hot .You will be surprise how good they all by adding jaggery, crushed curry leaves, paneer .its a divine looking kathi rolls with south Indian touch and taste wow.
