Chennai Special Lime Chicken Fry 

Ingredients:
 
  • Boneless chicken thighs -640g
  • Onion- 2 medium size 
  • Garlic cloves-3
  • Ginger and garlic paste - 1 tsp
  • Lime- 1
  • Turmeric powder-half a tsp
  • Cashew nuts-20g(optional)
  • Green chillies-4 
  • Curry leaves- 2 stems
  • Coriander- 2 stems
  • Salt - 1 tsp
  • Cumin seeds-1 tsp
  • Black pepper - 2 tsp
  • Garam masala powder- 2 tsp
  • Coriander powder- 2 tsp
  •  Panko breadcrumbs-10 tbsp
  • Plain flour -5 to 6 tbsp
  • Water - half a cup 
  • Avocado oil-200ml (To fry the chicken we will be using only sunflower oil or avocado oil)
  • Desiccated coconut -4 tbsp
  • Chilli powder(optional)-1 tsp

  1. Wash the chicken thighs and dice into medium size pieces .keep it on the side .Chop the onions into thin long slices ,chop the lime ,grate the garlic ,chop two the green chillies very small and two more green chillies into long slices ,chop the coriander into small pieces .
  2. Take chicken into a bowl add in ginger and garlic paste ,Salt, one tsp black pepper , few finely chopped green chillies or optional chilli powder ,desiccated coconut , garam masala powder, coriander powder, few coriander leaves ,turmeric powder, mix well keep it on side .
  3. Take a plate or a bowl add in panko breadcrumbs ,add in one tsp black pepper, one tsp garam masala powder, one tsp  coriander powder , one tsp chilli powder mix all well .keep it on side .
  4. Take a bowl add in plain flour mix with water into a thin paste keep it on side 
  5. Heat a frying pan with oil in a medium flame .Once the oil been heated .Add in chicken first dipping in plain flour and then into breadcrumbs slowly add in one by one into the hot oil taking lots of care .let it cook slowly turning each sides and remove them into a plate with kitchen tissue .When you complete with all the chicken pieces switch of the flame .
  6. Now take a non stick frying pan add 3 tbsp of oil and heat it in medium flame .Once the oil is ready add in cumin seeds ,chopped onions let it fry a bit ,add in green chillies , grated garlic, curry leaves add in fried chicken pieces ,mix well squeeze the lime ,garnish  with chopped coriander switch of flame .
  7. Enjoy Chennai special chicken lime fry with cooling yogurt rice .wow it will be superb combination to have with your friends and family .
