Andhra (Guntur)Chicken Curry
(Guntur kodi kurra)
Ingredients
-
Chicken thighs are the best for this dish with bone are boneless small pieces-roughly 520 grams
-
Olive Oil or sunflower oil -7 tbsp
-
Cumin Seeds-1 tsp
-
Mustard Seeds-1 tsp
-
Onions-3 medium size
-
Tomatoes-3 medium size
-
Garlic cloves-3
-
Curry leaves-2 stems
-
Dry red Chillies-3
-
Ginger and garlic paste-1 tsp
-
Coriander -small bunch for garnish
-
Salt-1 tsp
-
Chilli powder-1 tsp
-
Turmeric powder -1 tsp
-
Tamarind thick paste-2 tbsp
-
Desiccated or freshly grated coconut -3 tsp
-
Garam Masala Powder-1 tsp
-
Coriander powder-1 tsp
-
Pinch of black pepper powder
Method;
-
wash the chicken thighs nicely . Remove the fat off and dices them into medium size pieces and keep it on side

wash and chop the onions, tomatoes and garlic into very small pieces
-
chop the coriander into small
-
if you are using fresh coconut grate it into very fine or you can use desiccated coconut powder
-
add tamarind into warm water and keep it for 15 minutes and squeeze the tamarind until you get thick paste and keep it on side .we are only using thick paste of tamarind in this dish
-
now take a medium size deep non stick pan switch on the gas to medium heat
-
once the pan is heated add olive oil or sunflower oil.

when oil is ready add cumin, mustard seeds wait until its sizzle
-
add onions mix it well put pinch of salt and let the onions fry nicely into golden brown colour
-
we are now adding ginger, garlic paste, curry leaves, chicken, garlic cloves, red chillies mix all together keeping the heat on medium
-
keep mixing well .now add turmeric, salt, chilli power, coriander powder ,black pepper ,garam masala mix well .put the lid on for 25 minutes
-
take the lid off add tomatoes, thick tamarind paste keep mixing until your chicken is fully cooked
-
you should now getting wonderful aroma in your kitchen with beautifully looking Guntur chicken curry in front of you
-
now add coconut power mix well .make sure chicken is fully cooked and its coming off from bone easily and all the water is absorbed from tomatoes
-
if you think chicken is fully cooked now switch off heat.

garnish with fresh coriander and enjoy authentic chicken curry with plain hot hot rice with your lovely family or friends
