Courgette or Egg bhaji

Ingredient's 

  • If you are vegetarian you can make this bhaji with Courgette or carrots-2 big size or medium pack-200g
  • Boiled Eggs-4 to 5 
  • Ginger and garlic paste-1 tsp
  • Fresh curry leaves-2 stems
  • Coriander leaves-2 stems
  • Turmeric powder- half a tsp
  • Chilli powder-1 tsp
  • Green chilli -paste 1 tsp(optinal)
  • Coriander powder-1tsp
  • Black pepper-half a tsp
  • Garam masala powder-1tsp
  • Making the batter to make bhaji
  • Gram flour-300 grams(3 to 4 tbsp)
  • Salt- 1tsp
  • Chilli powder-1 tsp
  • Ajwan seeds-small pinch
  • Bicarbonate powder-half a tsp
  • Sunflower oil -500ml
  • Rice flour-2tbsp
  • Water to mix the batter

Mint,coriander chutney 
  • Mint -small bunch only leaves
  • Coriander-small bunch
  • Green chilli-1 or 2
  • Salt -half a tsp
  • Coriander powder-1 tsp
  • Yogurt-3 tbsp

Method:

  1. If you are vegetarian wash and chop the courgette into long slices or boiled 4 to 5 eggs for 7 to 9 minutes in a boil of water in a medium flame after 10 minutes switch off .Once they are cool peel the egg shell and slice it 2 half's keep it ready .
  2. Chop the coriander ,green chillies, curry leaves very fine keep them on side .
  3. Take a medium size frying pan heat with oil in medium flame.
  4. Heat a deep frying pan with oil in a medium flame. while its heating lets quickly make batter to deep fry the egg or courgette  bhaji
  5. Take a deep bowl. add in one cup of gram flour ,rice flour, salt, bicarbonate soda, chilli powder, ajwan seeds, garam masala powder, coriander powder, green chillies, ginger and garlic paste ,chopped coriander leaves, turmeric powder, chopped curry leaves,black pepper .Add in small amount of water first mix well and slowly start to add water .until it come to thick batter consistence .keep it on side.
  6. Now slowly deep long sliced courgette or half sliced boiled egg until all the batter sticks .Now add one by one into hot oil. Fry them until they look golden brown in colour. taking lots of care with hot oil.
  7. Once they are ready. Take the bhaji onto a plate with kitchen tissue paper. switch the flame off.
  8. Take bhaji into a serving plate they will be delicious with freshly homemade aubergine pachidi.
  9. Enjoy garam garam hot homemade egg or courgette bhaji with your family.
Amazing looking egg or courgette bhaji so delicious in taste are been my both children all time favourite evening snack Especially when you have them dipping into freshly made pachadi(chutney).with hot Indian masala chai
