Authentic South Indian Coconut Rice
(Kobbari Annam)
Ingredients
-
Coconut milk - 2 can's each 400ml (when you buy coconut milk try and look for high concentration of coconut .

We also need fresh coconut pieces or chunkys small pack 100g easily available in most asda,waitrose, sainsbury's supermarkets we will be grating to add in the dish to give a authentic taste. (coconut have potassium,mangesium,rich in vitamin c,e,good fats.Having fresh cocount pieces can lower your cholesteral,helps with anemia,immune system

Sona masoori rice or basmati rice -1 or 2 cups

Two and half glasses of coconut milk. Please use same glass that you measured the rice to get perfectly cooked rice .adding more coconut milk and less water is best.

Olive oil or sunflower oil-2 to 3 tbsp

Onion-half

Ghee-1tsp(optional)
-
Cashew nuts-10g(low in sugar ,rich in fiber,good for eye,good source of cooper,magnesium

Fresh Curry leaves only -2 stems(as a rich source of vitamin a,b,c,b2,calcium it gives a punget taste

Ginger and garlic paste-1tsp

Glass of water-1

Green Chillies(optional)-2 or 3
-
Dry red chillies-2

Mustard seeds-1tsp
-
Cumin seeds-1tsp

Chana daal-1tsp
-
Urid daal-1tsp(white lentils)

Salt-1tsp

Jaggery is healthy then sugar-1 tsp(boot immune system ,it got iron

Asafoetida powder-half a tsp spoon
Method;

Wash the onions chop them into very small pieces ,Chop the green chillies into two half's

Grate fresh coconut pieces into fine keep it ready .

Now wash the rice two to three times with water and keep it on side.

Take a deep non-stick pan heat oil with medium flame. Once the oil is heated .Add in mustard seeds ,cumin seeds, curry leaves, cashew nuts, green chillies that been cut into long slices, ginger,garlic paste, dry red chillies, asafoetida powder mix well. add in chana daal,urad daal, nicely fry them for one to two minute . Now add in four tbsp of desiccated coconut to give the rice a authentic taste .Fry until it will give you nice aroma from coconut , add in salt, one tsp of jaggery mix well.

Now add washed one or two cups rice and mix well.

Add in four cups of coconut milk into the rice .

keep the lid half way open .let it cook for 20 minutes checking now and then .In the end just put the lid fully on the rice wait for few seconds switch the flame .When you open the lid the aroma of freshly cooked coconut rice in your house will be incredible. Just checked rice is fully cooked mix slowly taking care .

Remove it into a good serving bowl and display it on the table.
