Chicken Coconut Mint Rice
(Kodi Kobbari Annam)
Ingredients
-
Boneless Chicken thighs are the best to use for this dish- 520 grams serves family of four .

Basmati rice-One cup (serves -2 people )
-
Coconut milk 1 tin -400ml (when you buy coconut milk try to buy high concentration of coconut or buy a coconut block which is 100 percent pure and melt in hot water very close to really coconut milk.

Onion - 1

Olive oil or sunflower oil- 70ml(10 tbsp) roughly

Desiccated coconut (course)-2 tbsp

Mint leaves - 2 stems
-
Coriander leaves- one stems
-
Green chillies - 2(optional)
-
Bay leaves - 2
-
Garlic cloves - 2
-
Cashew nuts - 10g
-
plain yogurt - 2tbsp
-
Lime - 1
-
Salt - 1 tsp
-
Cloves-2

Turmeric powder - 1 tsp
-
Chilli powder-1 tsp
-
Black pepper powder-half a tsp
-
Cumin seeds - 1 tsp
-
Garam masala powder - 2 tsp
-
Cinnamon stick - 1 small
-
Cardamoms - 2
-
Ginger and garlic paste - 2 tsp

Star anise - 1

Coriander powder - 2 tsp

Method:

Wash the chicken and remove fat cut into small to medium pieces .keep it on side.

Soak basmati rice in a bowl of water after washing twice. keep it on the side.

Chop the onion into long slices. keep mint leaves finely chopped. coriander finely chopped. keep garlic finely chopped.

Now marinate the chicken pieces in a bowl with one tsp of ginger and garlic paste, yogurt, salt ,chilli powder, one tsp garam masala, one tsp coriander powder ,black pepper powder.

Two garlic cloves thinly chopped ,few onion slices, few finely chopped mint leaves .keep it on side .

Now take deep frying pan heat the oil in medium flame once the oil is ready .Add in few leaves of mint .Add in marinated chicken fry nicely until it cooked fully. So we are trying to seal the chicken with spices before adding into the rice to give amazing taste to our rice. Remove the chicken pieces in a bowl and keep it on side .Try to keep it warm .

Now in same frying pan add in some more oil in keeping flame in medium.

Once the oil is heated .Add in cumin seeds, bay leaves, star aniseed ,green chillies, cardamoms, cinnamon stick, cashew nuts, mint , mix well for few seconds and then add chopped onions mix until onions are nicely cooked.

Now add in garam masala powder, coriander powder ,salt, turmeric, lime mix well .

Now add the rice that been soaking for 10 minutes remove the water and add mix well for few minutes now add the chicken back into the same pan mix all the spices well .Now add in coconut milk Using same cup that you measured your rice .Try to use more coconut milk then water to give lovely taste to the rice.2 cups of coconut milk and one half cup of water mix all together nicely .keep the lid on for 15 to 20 minutes in medium flame .After 15 minutes reduce the flame to low and let it cook for 5 more minutes and switch off the flame .let it rest for 5 minutes before opening the lid .

Once you open the lid check the rice is fully cooked .If you think the rice is not fully cooked put the heat back on with low flame by adding just few tbsp of water and keep the lid back on .once its done .switch the flame off .
