Andhra Chicken Fry with Cashew Nuts

(Kodi vepudu)

Ingredients

 

  • Chicken Thighs boneless-520g (approximately one pack)cut into small pieces

  • Mustard seeds-1 tsp

  • Cumin seeds-1 tsp

  • Fresh curry leaves-2 stems

  • Garlic cloves-3

  • Salt-1 tsp

  • Chilli powder-1 tsp

  • Green chilli-1 or 2

  • Dry red chilli-2

  • Cashew nuts-10g to fry and will be adding to the dish

  • Desiccated Coconut powder-4 to 6 tbsp or fresh coconut pulp

  • Mint-1 stem

  • Coriander leaves-2 stems for garnish

  • Onions(shallots)4 diced into small pieces

  • Turmeric-1 tsp

  • Cashew nut paste-2 tbsp

  • Black pepper powder-1 tsp

  • Garlic & ginger paste-1 tbsp

  • Olive oil-9 to 10 tbsp

  • Coriander powder-1 tsp

  • Garam masala powder-1 tsp

Method:

  1. Wash the chicken in warm water remove the fat and dice into small pieces . keep it on side.

  2. chop the onions ,garlic, coriander, mint, green chillies into small pieces. Make a paste of roughly 10 cashew nuts that should make 2 tbsp by adding bit of water .Cut one lime ready.

  3. Heat the non-stick frying pan with medium flame and add the oil. Once the oil is heated add in few cashew nuts fry them and remove them in a bowl to add in our dish in the end.

  4. Now add in shallots mixing well. once onions are nicely fried. Add in curry leaves, green chilli, ginger & garlic paste, black pepper, coriander powder, chilli powder ,salt, turmeric, garam masala, dry red chilli, cashew nuts mix well for 2 to 3 minutes 

  5.  Add in diced chicken pieces mix well into the spices well for 1 to 2 minutes .Put the lid on for 5 to 10 minutes let the chicken look nicely and all the water been evaporated then add in cashew nut paste, fresh  blended coconut pulp or dry desiccated coconut both will bring a amazing richness to the dish mix well  keep the lid half open let it cook until you see bit of oil shows on top .squeeze the lime .

  6. Let it cook for 15 to 20 minutes. let the chicken absorb cashew nut paste nicely and looks yummy with beautiful colour which will give rich taste to our dish.

  7. Let the chicken fry .Add in finely chopped mint leaves and coriander leaves mix well .

  8. It should be looking divine and will taste delicious too .Switch off the flame .Remove it into serving bowl and garnish with fried cashew nuts and coriander leaves .wow its a amazing chicken fry to enjoy with your family and friends in your comfort of your home sweet home.

  9. Your homemade chicken fry is ready to enjoy. Freshly made with your lovely hands mixing lots of love .

  10. Enjoy with hot sona masoori rice or on its own with your sweet family .
