Authentic Carrot Tomato Rasam 

Ingredients:
  • Carrots-2 medium size
  • Tomatoes-4 to 5 medium size 
  • Onion-1 medium size 
  • Curry leaves -1 stem
  • Garlic cloves- 2
  • Cumin seeds-1 tsp
  • Mustard seeds-1 tsp
  • Chana daal-1 tsp
  • Jaggery-1 tsp
  • Olive oil-2 tbsp
  • coriander - 2 stems
  • Black pepper-1 tsp
  • Dry red chillies-2 
  • (MTR)Rasam powder-2 tsp
  • Salt -1 tsp
  • Turmeric-1 tsp

  1. Wash tomatoes chop them into small pieces. Peel the  carrot skin chop it into medium size .Chop the onion, garlic ,coriander into small pieces.
  2. Heat a non-stick sauce pan in medium flame by adding small amount of oil .Once the oil been heated add in onion, carrot ,tomatoes mix well put the lid on for 10 to 15 minutes until the carrots fully cooked .
  3. After 15 minutes check the carrots are fully cooked switch the flame .Blend the cooked carrots, tomatoes, onion into a smooth paste in a blender .
  4. Now in same sauce with medium flame add two tbsp of oil one tsp of ghee .
  5. Once the pan been heated add in mustard seeds, cumin seeds, chana daal, chopped garlic garlic, dry red chilli, jaggery, curry leaves ,few coriander leaves, mix well add in salt, turmeric ,rasam powder, black pepper .Now slowly add in carrot, tomato, onion puree mix all well .Put the lid on and let it cook for 10 minutes .
  6. After 10 minutes switch of the flame garnish with coriander and enjoy the tasty rasam with hot hot plain rice with add drop of fresh ghee .
Amazing warm tasty rasam is so delightful to have in winter months with freshly cooked plain sona masoori rice by add a drop of ghee .
