Tomato, Coriander,Mint Pachadi (Chutney)

Tomato, kothimira and pudina (pachidi)
Ingredients
  • Ripe plum bigTomatoes-4 or a small pack 

  • Coriander-1 bunch

  • Mint-1 bunch

  • Salt-1tsp

  • Green Chillies-2

  • Soaked Tamarind pulp-1tbsp

  • Mustard Seeds-1 and half tsp

  • Chana Dal-1tsp

  • Cumin seeds-1 and half tsp

  • Fresh curry leaves-1 stem

  • Dry red chilli-1

  • Jaggery-small piece

  • Garlic-3 cloves

  • Olive Oil-3tbsp

my garend mint

  1. Wash and Chop the tomatoes. wash the coriander and mint with water and only use mint leaves .finely chop the coriander, keep to one side

  2. Soak the tamarind in hot water for 10mins and then take soft pulp from water .chop the garlic and green chillies .

  3. Take a non-stick frying pan .heat the pan in medium heat.

  4. Once the oil been heated, add in one tsp of mustard seeds, chana dal ,  two garlic cloves , one tsp cumin seeds, mint, coriander ,salt, tamarind pulp allow to sizzle for 5 minutes. fry nicely until  the water has been evaporated in the . switch of the flame .wait until it cools down.

  5. Once the mixture been cool down .

  6. Then blend it all in a blender to a smooth paste .take it  into a serving bowl .side it on a side.

  7. Now we going to Talimpu(Tadka)take a small frying pan .heat it with one teaspoon of oil in low flame. once the oil been heated add in few cumin seeds, mustard seeds, grated garlic clove, one red chilli ,few curry leaves remember to tear the curry leaves to release the aroma. fry until 1 to 2 minutes. switch of flame.

  8. Add the talimpu into the pachadi(chutney)

  9. Enjoy the pachadi(chutney) with hot plain rice or as an accompaniment! goes well with lots of rice dishes or as a spread.

Enjoy with yummy Indian tiffins like dosa. idli, upma or with hot sona masoori rice .
