Method;

Wash the okra with warm water and dry them with a cloth.

Cut the okras into small cubes or any shape that you want. Remember okra are bit sticky so you have to use different cutting broad for onion chopping onions, garlic, into small pieces.

Heat the pan on medium heat. Now fry onions, curry leaves, cumin seeds, chana dal chopped garlic, peanuts or cashew nuts ,red chillies ,sesame seeds Mix well and let them fry nicely . Let it all sizzle and fry till the onions gets softer.

Now add okras, turmeric, chilli powder, salt, garlic & ginger paste and mix it well.

Keep the heat low. Leave the pan lid half way open and cook for 10 to 15 minutes you may need to add drizzle some water and let it fry. once done add in dry desiccated coconut powder mix well and switch the heat off .

Adding fried peanuts or cashew nuts to okra dish will give you amazing taste to the recipe.

Garnish with chopped coriander.

Enjoy fresh okra fry with plain rice or roti.
