Hyderabadi Bagara Baingan

Vanakaya Kurra

Ingredients:
  • Baby aubergine(brinjal,vanakaya)-small 6 or big  aubergine-1 
  • Onion-1  medium
  • Green chillies-2
  • Olive oil-5 to 6 tbsp
  • Curry leaves-2 stems
  • Cumin seeds-1 tsp
  • Mustard seeds-1 tsp
  • Tamarind paste-3 tsp
  • Greek yogurt-3 tbsp
  • Turmeric powder-1/2 tsp
  • Red chilli powder-1/2 tsp
  • Salt- 1tsp
  • Coriander powder-1 tsp
  • Cumin powder-1 tsp
  • Dry red chillies-4
  • Coriander for garnish-2 stems
  • Ginger and garlic paste-1 tsp
  • Peanuts-handful
  • Dessicated coconut-3 tsp
  • Sesame seeds -4 tsp

Method:

  1. Wash the baby aubergine with warm water and spilt open in the middle and put in a bowl of salted water .
  2. Chop the onion ,green chillies and blend it into a smooth paste and it on side .
  3. Soak a small amout of a tamarind in a warm water  for 10 to 15 mintues .After that squeeze the tamarind pulp into a bowl to  get a thick paste and keep it on the side .
  4. Wash and chop the coriander .
  5. Now fry the  peanuts first and then add dessicated coconut ,sesame seeds and roast them  slightly. Once it cool down make it into smooth powder keep it on the side .
  6. Heat the pan with oil in a medium flame .Swallow fry the small aubergine  two  to  three at a time and remove on to the plate with kitchen tissue paper.Switch of the flame .
  7. Now use the same pan or take a wide pan .
  8. Heat the frying pan with three to four tbsp of olive oil in a medium flame .Once the pan is ready add in cumin seeds,mustard seeds, curry leaves,dry red chillies slightly fry and add in ginger garlic paste  mix well .
  9. Now add in onion and green chilli paste, let it cook nicely until all the water been absorb fully.
  10. Add in salt,tumeric powder,red chilli powder ,cumin powder,coriander powder mix well.
  11. Add in greek yogurt.The reason we are adding greek yogurt because it will not break while cooking.  let it absorb into the onion paste .
  12. Now add in peanut,dessicated cocount and sesame powder mix it well .
  13. Add in tamarind paste mix well if you need to add bit of water please do so .
  14. Put the lid fully on and let it cook well unslight it start to bubble it may take for 15 to 20 mintues .
  15. Now remove the lid add in fried baby aubergine slowly to the pan and mix well taking alot of care .Let it cook for 10 more mintues.
  16. Switch of the flame garnish with finely chopped coriander and enjoy the simply  divine tasting baby aubergine curry with your family and friends.
