Hyderabadi Style Classic Chicken orMonkfish or Cauliflower or Paneer 65

Ingredients :

  • If you are making this dish with boneless chicken thighs you need -300g,or if its monkfish you need -8 to 10 pieces in medium chunks or if you making with cauliflower you need a small size flower or paneer 200g
  • Ginger and garlic paste -2 tsp
  • salt-1 tsp
  • curry leaves-2 stems
  • coriander leaves-2 stems
  • Fresh ginger - small piece
  • Green chilli paste-1 to 2 tsp
  • Sunflower oil to deep fry-250 ml
  • Olive oil-2 tsp
  • Garlic cloves-2 to 3 
  • Cumin seeds-1 tsp
  • Dry red chillies-3
  • Turmeric powder-Half tsp
  • Chilli powder-1/2 tsp
  • Coriander powder-1 tsp
  • Garam masala powder -1/2 tsp
  • Cumin powder -1/2tsp
  • Chilli sauce (sriracha) 1 tsp
  • Cashewnuts optional(10g)
  • Egg-1 or yogurt-2 tsp
  • White  pepper powder-1 tsp
  • Lime -1 
  • Rice flour -2 tbsp
  • Corn flour -3tbsp

Method:
  1. wash the chicken or fish or cauliflower or paneer and dice them into method size pieces .If you are  using fish wash it with pinch of turmeric powder and pinch of salt and keep it on the side.chop fresh ginger into small pieces,garlic into small pieces,coriander chopped thinly too.

  2.  Now take a bowl add in washed chicken or fish or cauliflower or paneer ,chilli powder,salt,turmeric powder,lime,corn flour,rice flour,white pepper,cumin powder,you can add egg or yogurt if you making with caulifower add yogurt, ginger and garlic paste ,green chilli paste,coriander powder,garam masala powder,squeeze lime juice and mix all together well .

  3. Now take a deep frying pan and heat sunflower oil in heat flame untill its hot .

  4. Now slowly add a small piece of cauliflower or fish or chicken or paneer if the piece is not holding the flour then add one more tbsp of rice flour and corn flour and mix well check the seasoning by tasting a small piece of cauliflower.If you need to add bit more salt or chilli powder add now before you start frying them all .

  5. Mix all together nicely and start frying them into gloden brown colour and remove them into the kitchen tissue paper .Once you fried all of them switch of the flame and keep the hot oil in a safe place .

  6. Heat a non-stick frying pan in a medium flame by adding in olive oil .

  7. Once the oil is heated add in chopped fresh ginger pieces optional,cumin seeds,garlic cloves, curry leaves,cashewnuts optional,mix together and add in sriracha sauce mix all together into a paste.Add some water to make it a saucy consistency. Now add in fried chicken pieces or fish or cauliflower mix all together well optional squeeze half a lime piece.Add in finely chopped coriander switch of the flame .

  8. Remove it into a nice serving plate or bowl  garish with bit more coriander leaves .
