Aloo(Potato)Bonda

Ingredients
  • Potatoes-small pack 500 grams(peel the skin and keep them ready boiled)
  • Onions-2
  • Ginger and garlic paste-1 tsp
  • Fresh curry leaves-2 stems
  • Coriander leaves-2 stems
  • Cashew nuts(optional)-80 grams
  • Turmeric powder- 1tsp
  • Salt-1 tsp
  • Chilli powder-1 tsp
  • Green chilli -paste 1 tsp
  • Garlic cloves-2
  • Cumin seeds-1tsp
  • Mustard seeds-1tsp
  • Coriander powder-1tsp
  • Garam masala powder-1tsp
  • Making the batter to make bonda
  • Gram flour-300 grams
  • Salt- 1tsp
  • Chilli powder-1 tsp
  • Turmeric powder-half a tsp
  • Ajwan seeds(its similar to thyme flavour)in english its know as bishop's weed.It is good for relive bloating,gas,indigestion-only need a small amount
  • Bicarbonate powder-half a tsp
  • Sunflower oil -500ml
  • Rice flour-2tbsp
  • Water-small cup
  • Sriracha sauce-small bottle to make a spicy dip mix with plain yogurt
  • (Optional)If you want to have this bondas as a tasty vada pav style with brioche buns.1, Please keep a simple mint sauce ready by blending one bunch of fresh coriander,mint leaves with a pinch of salt,one green chilli,touch of water blend into a smooth paste and keep it ready .2,Make a powder(podi) with handful of peanuts dry roast adding ten garlic cloves,0ne tsp chilli powder,half a tsp salt,turmeric and dry blend it into coarse powder and keep it ready to add into the buns with bonda it will be yummy.

Method:
  1. Wash and peel the potato skin and boil the potatoes in water with medium flame for 20 to 25 minutes .switch the flame off. let the potato cool down.
  2. Chop the onions finely into small pieces and keep it on side
  3. Chop the garlic cloves, coriander ,green chillies keep them on side .
  4. Chop the cashew nuts into small pieces.
  5. Take a medium size frying pan heat with oil in medium flame.
  6. Once the oil is ready .add in cumin seeds, mustard seeds, cashew nuts mix well
  7. Now add in onions ,ginger and garlic paste, turmeric powder, chilli powder, salt mix altogether well 
  8. Tear in curry leaves to release the aroma from leaves
  9. Now add the boil potatoes mix well for 10 to 15 minutes. switch off the flame. let it cool.
  10. Heat a deep frying pan with oil in a medium flame. while its heating lets quickly make batter to deep fry aloo bonda
  11. Take a deep bowl. add in one cup of gram flour ,rice flour, salt, bicarbonate soda, chilli powder add in small amount of water first mix well and slowly start to add water .until it come to thick batter consistence .keep it on side
  12. Now start doing small balls with potatoes mix and drop them into batter.
  13. Now slowly add one by one into hot oil. fry them until they look golden brown in colour. taking lots of care with hot oil.
  14. Once they are ready. take the bonda onto a plate with kitchen tissue paper. switch the flame off.
  15. Enjoy garam garam homemade aloo bonda with your family.
Amazing looking aloo bonda are so delicious taste both my children all time favourite . Especially when you have them dipping into freshly made pachadi(chutney) or as a vada pav with brioche buns,mint chutney,peanut podi and hot Indian masala chai
